Slightly sweetened by full of flavor, lemon flavored Rum. Think of a Limoncello but with a rum twist. Pour over some ice, grab a chair, and watch the world spin.

Origins
Before I started distilling and while working as a contractor with the Army, I was able to travel the world. One of the places I was able to go was to Italy, I supported a small training exercise in the middle of Italy at a tiny base. While there I grew to know several of the lcal shop owners and we had a great many conversations around pizza, the lifestyle, and of the lcoal spirits. My favorite pizza place would often grab us on the way out to say thank you for the business with a toast. He would pull out his, unlabeled, bottle of limoncello from the fridge and toast.
I didn't know, before this trip, how much I enjoyed a good, cold, limoncello.
Behind the scenes
This one is very straightforward, I take a ton of lemons, as fresh as I can get, and zest them one at a time. It's hours and hours of sitting at the bar zesting. I end up with some very yellow hands, a bar that smells incredible, and a small amount of lemon zest at the bottom of my bucket.
I have found over the years that I do not like the limoncello that I can buy locally. It's either too bitter to drink, needding to be mized with something, or it's so syrupy, thick with sugar, that I can feel the diabetes starting. The Eazy Peazy is my take on a happy medium between bitter and sweet, it's not too strong yet you can taste that it is alcohol.
